
AIR FRYER BANG BANG SHRIMP
Bang bang shrimp is a favorite appetizer, but can also be the perfect supper. Crispy shrimp are an excellent vehicle for a sweet, sour, and spicy sauce that covers the crispy coating — making it soft and crunchy at the same time.

INGREDIENTS
6 Tbsp. mayonnaise
3 Tbsp. sriracha
3 Tbsp. Thai chili sauce
1 tsp. finely grated lime zest
1 Tbsp. fresh lime juice
Kosher salt
3 Tbsp. cornstarch
1 large egg
1 2/3 cups panko breadcrumbs
3 Tbsp. vegetable oil
1 lb. extra-large shrimp, peeled, deveined
1 scallion, thinly sliced
DIRECTIONS
Step 1: In a small bowl make the bang bang sauce — combine mayonnaise, sriracha, chili sauce, lime zest, and lime juice; season with salt.
Step 2: Place cornstarch in a large shallow bowl. In another large shallow bowl, whisk egg and 1 tsp. salt. In a third shallow bowl, stir panko and oil. Toss shrimp in cornstarch, then in egg, letting excess drip off. Toss in panko mixture, gently pressing to adhere.
Step 3: Preheat air fryer to 400° for 5 minutes. Arrange half of shrimp in air fryer basket.
Step 4: Cook shrimp until crispy, golden brown, and firm, about 8 minutes.
Step 5: Transfer to a paper towel-lined plate to drain. Repeat with remaining shrimp.
Step 6: Transfer shrimp to a large bowl. Add bang bang sauce and toss to coat. Sprinkle with scallions.
