CLASSIC MOJITO

A great cocktail to pair with bang bang shrimp is a crisp, refreshing classic mojito. The bright lime, fresh mint, and clean spirits cut right through the rich, creamy, and spicy sweet-chili mayonnaise sauce of the fried shrimp.

INGREDIENTS AND EQUIPMENT

2 oz. white rum

0.75 oz. fresh lime juice

0.5 oz. simple syrup (or 2 teaspoons granulated sugar)

6 to 10 fresh mint leaves (plus extra for garnish)

Club soda (to top)

Ice (crushed or cubed)

Cocktail muddler

INSTRUCTIONS

Step 1: Prep the mint: Place the mint leaves in the bottom of a highball glass. Gently slap the extra mint garnish to release its oils.

Step 2: Muddle: Add the simple syrup and fresh lime juice. Use a muddler to gently press and twist the mint — do not shred or tear the leaves into pieces, or the drink will turn bitter.

Step 3: Add rum: Pour in the 2 oz. of white rum and stir briefly to combine the flavors.

Step 4: Add ice and fizz: Fill the glass with ice (crushed ice works best) and top off with club soda.

Step 5: Stir and garnish: Stir gently from bottom to top to distribute the mint and lime, then garnish with a fresh sprig of mint and a lime wheel.
